Even those who don’t like bananas, often admit to liking banana bread, and with the combination of some delicious toasted nuts, this bread is perfect when paired with some cold, salted butter!
INGREDIENTS
- a heaped handful of chopped, toasted, skin-on hazelnuts
- 7oz plain flour
- 4oz caster sugar
- 2 oz softened butter
- 1 large egg
- 2 ripe bananas, mashed
- 1 level teaspoon of baking powder
- 1/2 level teaspoon of bicarbonate of soda
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of ground ginger
- a little milk
Method
- Heat the oven up to gas 4 / 180oC / 160oC fan
- Grease and line a loaf tin
- Sieve the flour, bicarbonate of soda, baking powder, ground cinnamon and ground ginger into a mixing bowl
- Rub in the butter and caster sugar until it has a sand-like consistency
- Add in the mashed bananas, beaten egg, hazelnuts, and mix well
- If the mixture is too thick, add a small dash of milk to loosen
- Bake for around 1 hour – to check if it’s ready, insert a thin skewer into the centre of the cake, it should be clean when it’s removed
- Cool on a cake rack, and then slice and enjoy!
