Still deemed by most as a weed, nettles are still not a regular on the foraging menu. Have a go at making this delicious, nutritious soup and see if you can be converted! Make sure you wear gloves!
INGREDIENTS
- 180 gms chopped onion
- 30 gms butter
- 250 gms nettles, washed and drained.
- 4 Tsp Swiss vegetable bouillon powder – or vegetable stock cube.
- 1 Litre water

Method
- Melt the butter in a pan, and when foaming add the onion. Soften the onion over a gentle heat without colouring.
- Once the onion is soft, add the nettles, and wilt in the pan over the same gentle heat.
- Add the stock powder and water and stir well. Alternatively you can use 1 litre of home made vegetable stock here.
- Simmer the soup for 20 mins.
- Pour the mixture into a magi mix or blender and blend until smooth.
- Adjust seasoning and serve.
