Apple crumble is always a crowdpleaser, and you can have lots of fun with the ingredients in the crumble element. Apples are just starting to come in to season and we have used Bramley’s here but you could also use eating apples and reduce the sugar slightly. Why not throw in some blackberries too if you have some?! Serve with cream or custard for extra indulgence!
INGREDIENTS
- 4 large cooking apples
- 8oz soft brown sugar
- 1 tsp cinnamon
- juice of 1/2 a lemon
Crumble:
- 2 1/2 oz plain flour
- 1 1/2 oz brown sugar
- 3 oz oats
- 2 oz coconut oil
- 2 oz cashew nuts
- 2 oz almonds
Method
Preheat oven to 170°C Fan
- Peel the apples and chop them into 2cm chunks. Mix with the brown sugar and lemon juice and place in an ovenproof dish.
- Toast the nuts in the preheated oven for about 7 minutes.
- Blitz all the remaining crumble ingredients in the food processor for 5 or 6 seconds.
- Add the toasted nuts to the food processor and blend until the nuts are chopped small but not too fine to keep some texture.
- Sprinkle the crumble mixture on top of the apples and bake in the oven for 20 minutes until the topping is golden brown and the house smells wonderful!
