As the days and nights get cooler, the mice start to think of comfort foods, especially those that will make the most of their seasonal produce. These savoury muffins make a delicious light meal and are another way of using up those windfall apples…..
INGREDIENTS
- 150g self-raising flour
- 40g softened butter
- 1/2 tsp baking powder
- 50g caster sugar
- 50g grated cheddar cheese
- 2 eggs
- 1 cooking apple, cored, peeled and cut into small chunks
- 1 heaped teaspoon chopped sage
- A handful chopped walnuts
- a pinch of salt
Method
- Preheat the oven to 180°C(fan)
- Cream together the butter and sugar.
- Beat the two eggs and add them slowly to the butter and sugar, stirring continuously.
- Sift in the flour and baking powder and stir gently.
- Add the walnuts, cheese, apple, sage and salt and stir.
- Divide the mixture between 6 muffin cases and bake for 20 minutes.
