The name ‘Apple Snow’ can be deceiving….it is a creamy, yet refreshing pudding which would compliment a meal at any time of the year. Â Quick and easy to make, this recipe goes really well with some little shortbread biscuits.
INGREDIENTS
- 4 Bramley Apples
- 50g caster sugar plus 25g for the meringueÂ
- zest of 1 lemon
- 1 egg white
- 300ml cream

Method
- Peel and core the apples and place them in a saucepan along with the lemon zest and 50g caster sugar.
- Cook gently on a low/medium heat until it all comes together as a puree.
- Whisk the egg whites until they form stiff peaks.
- Add the remaining 25g caster sugar to the egg whites, a teaspoon at a time whilst continuing to whisk.
- Whip the cream until it has a soft peak consistency.
- Gently combine the cream, meringue and apple puree mixtures together in a bowl using a cutting and folding motion to try and retain as much air as possible.
- Spoon in to decorative bowls or glasses and chill for a couple of hours before serving.
